Grade B vs Grade A: What Is the Difference?

Grade A (Gourmet) beans are plumper with higher moisture content, ideal for recipes where the whole bean or seeds are visible. Grade B (Extract) beans are drier and thinner, but they actually contain a higher concentration of vanillin per gram of bean. This makes them the superior choice for extraction and infusion purposes, where appearance does not matter but flavor intensity does.

How to Make Vanilla Extract

Split 6 to 8 Grade B beans lengthwise per 8 ounces of vodka or rum. Place in a glass jar, seal tightly, and store in a cool, dark place. Shake gently once a week. The extract will be ready in 8 to 12 weeks and will continue to deepen in flavor over time.

Ensure lasting quality by storing your vanilla beans in a cool, dark place in an airtight container. Avoid refrigeration or freezing, as moisture accumulation can lead to mold. Store at room temperature away from direct sunlight and heat sources to preserve their rich flavor and aroma.
